Chicken meatballs.

One of my more successful cooking endeavors was this Italian-themed dinner of chicken meatballs and cauliflower mozzarella sticks. I've been seeing recipes for these popping up all over my Pinterest feed lately, and I thought they both sounded delicious, so I gave them a try. My mother is gluten intolerant so I try to cater to her when I'm choosing meals to make. This dinner was totally gluten free, and I think the cauliflower worked pretty darn well as a substitute for regular bread sticks. It made the mozzarella sticks a little softer and more moist than normal, but they had a great flavor.
The meatballs called for lemon zest, and I think that could be cut down a little. I made these recipes twice in a week, because after the successful weeknight dinner, my parents suggested that I make it again for a gathering with family and friends that weekend. I doubled the recipe that time, and tried to reduce the amount of lemon I put in, but it still tasted a little too lemon-y for my taste.
I used this recipe for the meatballs and this recipe for the mozzarella sticks. Thanks to the lovely ladies who came up with them!
